Yuca is a starchy root with rough brown skin and a white flesh. It grows in South America, Asia, and tropical climates and provides nutrition to millions of people worldwide. It's high in carbs, fiber, and potassium, but inexpensive & readily available.
Yuca is more commonly referred to as tapioca in the United States but they are the same plant. The pearls you find in tapioca pudding are made from ground, mashed yuca.
Much like a potato, yuca flesh can be mashed, sauteed, boiled, stewed, or fried. It can also be dried and made into flour. Its flavor is mild and is perfect to pair with so many meals.
Never eat raw yuca because it can make you sick. It must be cooked thoroughly before eating.
To prepare the root, cut off the tapered ends with a sharp chef's knife. Stand the root upright and use the knife to slice off the skin--just like a pineapple. And, just as a pineapple has a core you shouldn't eat , yuca does as well. Cut around the core and just leave the flesh.
Cook the yuca right away and freeze any leftover chunks; yuca spoils quickly and will only last about a day in the fridge.
