One of my favorite and super easy Recipe. Chicken Sukka or Chicken Dry is a super delicious and mouth-watering chicken dish. This is a Goan Style of dry chicken. Chicken sukka is also a popular Indian recipe that can be enjoyed as a side dish/starter and also goes well with any type of bread. This is a very quick and easy recipe made using whatever spice powder is available at home. There is no water used in this recipe and chicken is cooked in its own juices.


INGREDIENTS:
For Chicken Marinate:
Chicken (cleaned & washed thoroughly) – 500gm
Salt – 1 tsp
Turmeric powder – ½ tsp
Red chilli powder – 1 tsp
Dry coriander powder – 1 tsp
Cumin powder – ½ tsp
Kashmiri chilli powder – ½ tsp
Goan garam masala – ½ tsp
Half lemon juice
Ginger garlic paste – 2 tsp
Kasuri methi – 1 tsp

For Chicken Cooking
Oil – 8 tbsp
Chopped ginger – 1tsp
Chopped garlic – 2tsp
Green chilli – 1
Fresh coriander leaves
Kasuri methi
Salt to taste
Onion – 2 medium sizes
Tomato – 1 medium size
Soya sauce – 1 tbsp
Chicken Maggie cubes – 1
Crushed black pepper – 1 tsp

METHOD/PREPARATION
Step 1:
Marinate chicken (ingredients mentioned above) for 1 hr.

Step 2:
In a kadai, heat 5 tbsp oil. Add marinated chicken and saute till 80% cooks. 1st minute saute chicken on high flame and the cooking process on low flame only. It will take almost 10-15 minutes to cook 80% chicken on low flame. Don’t add water, stir fry chicken in oil and water from marinated chicken.
After the chicken is cooked 80%, switch off the gas and remove the chicken in a bowl.


Step 3:
In The same kadai, add 3 tbsp oil, once the oil heats. Add chopped ginger and garlic, and saute till the raw smell of ginger garlic goes away. Add green chilli, coriander leaves and Kasuri methi. Saute for some time. add chopped onion, and saute till translucent on low flame. Add 80% fried or cooked chicken. Saute for some time. add tomato, soya sauce, salt to taste, Kasuri methi, Maggie cubes, and crushed black pepper and mix it well. Cover and cook on low flame for 10 minutes till 20% chicken cooks. Don’t overcook it.
Once’s chicken is cooked properly switch off the gas and garnish with fresh coriander leaves.

Serve Hot and juicy Goan Chicken Dry with Chapatis, pav, poee or as a starter for parties.
