Chicken Cafreal is always made from whole chicken legs, flavoured with spicy, tangy, herbs, and then pan-fried or grilled.
It is believed that this dish originated from Portuguese colonies in Africa, most likely in Mozambique. Portuguese brought this dish to Goa, and it has since become an important part of the local cuisine. The popularity of chicken cafreal has also spread beyond Goa and is now used in restaurants and homes across India and around the world

Ingredients:
1st Marinate:
Chicken (cleaned and washed thoroughly) – 500gm
Salt – as per taste
Turmeric powder – ½ tsp.
Crushed black peppercorn – ½ tsp.
Crushed ginger – ½ inch.
Crushed garlic cloves – 6
Finely chopped onion – 1 small size
Olive oil – 2tsp.
Goan toddy vinegar (Goan local vinegar) – 2tsp.

Special chicken cafreal masala:
Fresh coriander leaves – 1 bowl
Fresh pudina leaves – 1 small cup
Cumin seeds – ½ tsp.
Black peppercorn – 2tsp.
Cloves – 6
Cinnamon stick – 2inch
Green cardamom – 5
Green chilies – 3 (if you like spicier you can add 2 more chilies)
Garlic flakes – 13
Ginger – 2inch
Roughly chopped onion – 1 small size
Goan toddy vinegar (Goan local vinegar) – 4tsp.

Method/preparation:

Step1:
Add all ingredients (mentioned above on 1st marinates) in a bowl mix it well and keep aside.

Step 2:
Add all ingredients (mention above special chicken cafreal masala) in a mixer grinder jar and make a fine paste.

Step 3:
Apply ground cafreal masala to the marinated chicken pieces and keep it in the refrigerator for 2hrs.

Step 4:
For chicken cafreal
Heat a pan, pour 4tsp. olive oil in a pan, once’s oil heat, put marinated chicken pieces (coat cafreal masala well) in a frying pan. Fry both sides on low flame for 10 minutes. Pour cafreal masala into a pan, mix well in chicken pieces, and cover and cook for 5-6 minutes on medium to low flame.
After 6 minutes open the lid and cook till gravy become thick.

Goan chicken cafreal is ready, serve it with local Goan polee.
