khoresht fesenjān recipe - chicken walnut pomegranate stew

This is a sweet and sour, but warm and comforting Persian stew called Khoresht Fesenjan or Fesenjoon. It is usually made during parties, but since this is one of my favorite dishes, we eat it more often.

ingredients:
2 lb walnut
2 lb chicken breast
1 yellow onion
1 tsp advieh (persian curry spice mix) - see this video on how to make your own: How to make Persian Curry Spice Mix (...
1/2 tsp salt
1/4 cup pomegranate molasses
water, as needed

instructions:
1) chop your walnuts/process them in a food processor. add water as needed.
2) put walnuts into a pot and cover with water. simmer over low heat for 2-3 hours (so the oil of the walnut comes out)
3) meanwhile cut onion, season chicken with advieh and salt - put all in a pot and cover with water. bring to boil and lower to medium heat - cook for about 15-20 minutes (or until chicken is cooked)
4) once chicken is cooked, remove from stove and let cool - remove chicken only and chop into pieces. (you can save the onion and broth for anything else)
5) add chicken into the pot with the walnuts and add the pomegranate molasses. cook for about 15-20 more minutes (or until the desired color is achieved) - the longer they stew together, the more flavor comes out.

serve with rice ! noushe jan
