Thin Crispy Coconut Cookies

These thin coconut cookies are amazing ! I'm baking these in response to a request from one of my You Tube followers , I hope they will like the recipe ! I was able to use my thin oatmeal cookie recipe and tweak it to make these delicious ,super crispy  cookies . DO NOT  skip toasting the coconut flakes as this will make a big difference in the flavor. When finished baking  leave them plain or drizzle with melted semi sweet chocolate chips,  butterscotch chips or vanilla chips, to kick them up a notch !

Ingredients :
1 and 1/2 Cups Toasted Unsweetened Coconut Flakes
1 and 1/2 Cups Ground Rolled Oats
1 and 1/2 Cups Unbleached Flour
1/2 Teaspoon Salt
1 Teaspoon Baking Soda
2 Sticks Very Soft Butter
1 and 1/2 Cups Light Brown Sugar
1/2 Cup Granulated Sugar
1 Large Egg
1 Teaspoon Vanilla Extract
1/4 cup or more Melted Semi Sweet Chocolate Chips to Drizzle
