Baduma (Meaning “ fried” in Sinhala) is a wonderful, crunchy, deep fried side dish or garnish, especially served with a special occasion meal like Yellow Rice or Fried Rice.

It can be made very quickly and easily for that extra “Puller” to the main meal.

This recipe contains Onion (which is often a primary ingredient in a Badum), Cashew & Dhal.

Other common variations include, Onion with Sprats, or pieces of dry fish (Karawala), Peanuts and Curry Leaves.

It can be as spicy as you can tolerate or as mild as you like.

Quantities and ratios are not specified in this recipe as it can be made to suit your preference.

Happy cooking!
