4 eggplants
2 handfuls Okahijiki (saltwort)
A little sesame oil
50ml mentsuyu (Japanese soup base : 3x concentrated)

[Eggplant peel with mustard sauce]
4 eggplant peel
2 tsp mustard powder
1 and 1/2 tbsp soy sauce
2/3 tbsp sugar

[Mozuku seaweed and chicken porridge]
1L Dashi stock
200g cooked rice
200g ground chicken breast
150g fresh mozuku seaweed
1 egg
1/2 tsp salt
1/2 tbsp sugar
2 and 1/2 tbsp soy sauce
A little squeezed ginger juice
1 Umeboshi (pickled Ume plum)

[Umenoshi (pickled Ume plum) ver.2024]
1300g ripe Ume plums
200g salt

[Apricot jam]
900g apricots (seeds removed)
200g cane sugar
300g granulated sugar

[Hijiki and green peppers simmered in Japanese pepper]
5g dried Hijiki seaweed
3 green pepper
1 Aburaage (deep-fried tofu)
100g peeled clams
1/2 tbsp fresh Sansyo (Japanese pepper)
1 tbsp sake
1/2 tbsp sugar
1 tbsp soy sauce

*If you don't have fresh Japanese pepper, you can use a little powdered Japanese pepper.

[Nameko mushroom and Nagaimo (Chinese yam) soup]
1/2 nameko
About 5cm Nagaimo (Chinese yam)
1 pack dried Katsuobushi (bonito flakes)
2 pinches Shiokonbu (salted kelp)
Appropriate amount Dashi stock
A little soy sauce

[Zucchini wrapped in meat with grated daikon radish and ponzu sauce]
1 zucchini
250g thinly sliced ​​pork belly

[Spicy curry with ratatouille and chicken]

3 tsp coriander
2 cardamom pod

1 tsp brown mustard

4 tsp garam masala
2 tsp turmeric
3 tsp paprika powder

1 tsp chili pepper
1 tsp bay leaf
1 tsp oregano
1 tsp thyme
1 tsp nutmeg
1 tsp cinnamon

*Curry ingredients
2 servings rice
2 chicken thighs
1/2 large zucchini (1 medium size)
1/2 large eggplant (2 medium size)
2 tomato
2 pepper
2 onion
3 cloves garlic
2 cloves ginger
3 tbsp flour
5 tbsp yogurt
200ml milk
200ml water
5 bouillon cubes
1 tsp salt
15g butter
4 tbsp apricot jam

[Arugula, cheese and nut salad]
Appropriate amount arugula

Appropriate amount almonds (finely chopped)
Appropriate amount salt and pepper
Appropriate amount lemon juice
