Dopiaza simply means 'two onions', In Hindi “do” means “two” and “piaza” means  onions – So the name Dopiaza means two lots of onions. This delicious curry kicks off with a big batch of caramelised onions, to which fragrant spices and Lamb/chicken/Veg etc are added and then followed by the second lot of piaza (onion) towards the end.

The Lamb Dopiaza Recipe we are showing you on this video is a British Indian restaurant style. As with all Indian Restaurant style recipes we will need Pre cook lamb for our Dopiaza curry including stock/Sauce from pre cooked lamb to boost the flavour of this lamb dopiaza curry. If you want substitute the lamb for Chicken/veg please do so.


Ingredients for Lamb Dopiaza

8-10 bite sizes pieces Pre Cooked Lamb and stock (you can also use chicken/Veg/Prawn etc if you want)
200-250ml Base Gravy
1 tsp Ginger Garlic Paste
Salt to Taste
0.5 tsp Fenugreek/Methi Leaves
1 Chefs spoon Tomato Puree Paste
1 Chefs Spoon Service Onion
1 tsp Mix Curry Powder
0.5 tsp Chilli Powder (optional)
0.5 tsp Gram Masala
¼ tsp Turmeric Powder
Half Onion and green pepper squared


Instruction To Make Lamb Dopiaza

Step 1
Soften squared onion and pepper as per video guide (Dopiaza)

Step 2
Add oil to pan, ½ tsp ginger garlic paste, service onion, tomato puree paste, cook for couple of mins then add methi leaves and salt.

Step 3
Add Mix curry and Chili Powder and cook for 2mins on high heat adding some amount base gravy to avoid burning the spices and enhance the spice flavours. Then ad pre cooked Lamb along with stock/sauce from the pre cooked lamb (this is enhance the lamb Dopiaza curry flavours) and cook for 4-5mins on high heat until the oil raises. Mix well occasionally, add some base gravy if required.

Step 4
Once Lamb is hot and absorbed all the flavours from the spices, add the dopiaza which we cooked earlier, 200ml base gravy, 1/5 tsp garam masala, 2 tomato pieces, mix well and then cook for a further couple mins on high heat, until its reaches the thick sauce consistency and garnish with fresh coriander (I realised I didn't have any mid way through cooking lamb dopiaza oops).

This Lamb Dopiaza is best served with plain boiled rice, butter paratha/nan bread.
