Today I will make Chicken Dopiaza from scratch NO BASE GRAVY – 3rd in the run of 3 to show how to cook a curry at home no base gravy, This is one of my favourite curries containing onions cooked 2 different ways. This is not for those bir purists in anyway this is a fantastic Chicken Dopiaza from scratch NO BASE GRAVY cooked at home a very tasty and satisfying curry!

Taking Cooking food back to basics.

Ingredients

I large chicken breast cut into 8 cubes
3 tablespoons of vegetable oil
6 tbsp onion paste – see madras video to see how to put oil on some onions and cook them in the oven with a sprinkle of garam masala - Chicken MADRAS The BEST Chicken MADRA...
1/2 large onion finely sliced
1/2 large onion, cubed
1/4 a green pepper, cut in chunks  (optional)
1/2 a tomato cut in 4 slices
1/2 teaspoon of salt
1 tbsp garlic ginger paste
2 tbsp tomato paste watered down with 6 tbsp of water
1/4 - 1/2 tsp chilli powder or more if you want it hot
1 tbsp level curry powder of choice - or use a mixed powder if you make curries
1/2 tsp coriander powder
1/4 tsp cumin powder
1/4 tsp turmeric powder
1 tsp garam masala powder
1/2 tsp sugar
6 pieces of meat, vegetables, tofu or paneer (recipe links below)
250 ml to 300 ml of boiling water
coriander if you like stirred in
pinch of garam masala on onions and at the end of cooking the curry
