Chicken Staff Curry Recipe BIR Style, this is an absolute beauty of a recipe, must say tho, the delicious aroma will be in your house for days however its totally worth it.

This Chicken Staff Curry Recipe was my go to recipe when cooking for our staff members back in the days, I would accompany this chicken curry with a home style Tarka Dhall, salad and some boiled rice.

Ingredients To Make Chicken Staff Curry

850g Chicken curry cut (basically a whole chicken cut in to pieces)
3 chefs Spoon oil (half a cup aprox)
15g Fresh Ginger Crushed (chopped into thin slice and crush them using a motor and pestle or just blend them but not to a paste)
20g Garlic Crushed( chopped into thin slice and crush them using a motor and pestle or just blend them but not to a paste)

3 Bayleaves
2 Green Cardamon
5-6 Cloves
2 Cinnamon Stick
6-7g Coriander stalks

3 Medium Red/white Onion
1.5 tsp Salt (to Taste)
5-6 Green Chilies (optional)
3 Potatoes cut in quarters
2 Fresh Tomato Diced

0.5 tsp Turmeric Powder
1 tsp Coriander Powder
1.5 tsp  Chilli Powder (To Taste)

0.5 tsp Gram Masala

Handful of fresh coriander
1tsp Dried Fenugreek Leaves

How To Make Chicken Staff Curry | Murgi Salan- Please FULL Watch Video as I give hints n tips throughout the video to help you recreate this delicious Chicken Staff Curry.

Here's a basic Instruction
Cooking time approx 1.5hr

add oil to pan on medium to low heat, then add whole spices (bay leaves, cloves etc), cook for 20seconds or so then add ginger garlic, cook for few minutes, until it changes colour and you can smell the aroma then add onions, coriander stalks and salt. Mix well and leave on low for 6-10mins, stir occasionally and add some hot water when needed to a avoid burning. You want the onions to go nice a soft as though its dissolving.

Once onions are soft add powder spices and cook for 4-5mins on medium to low heat, adding some hot water when needed and then add chopped tomatoes and then continue to cook this spices until the tomatoes have gone soft and mushy.

Then add chicken and cook for 4-5mins on high heat to seal in, stir continuously to avoid burning then place on medium heat for 20-25mins and stir occasionally.

Then add potatoes mix well, add hot water enough to cover all ingredients, add a some green chilli (optional) and a handful of coriander. Cook until potatoes are soft and chicken is fully cooked this should take another 20mins apron.

Now add gram masala, fenugreek leaves, handful of coriander, mix well and leave on simmer for about 10min.
