How To Make Perfect ANZAC Apricot Biscuits – Melissa’s Home Cooking

ANZAC is an acronym for Australian and New Zealand Army Corps.
To commemorate and remember those Australian and New Zealand soldiers that fought to maintain democracy and sacrifice their lives for our freedom, on the 25th  day of April of every year. Also in remembrance of my grandfather-in law Pte Walter James William Ford. 102 years ago, he returned home to NZ having served in the Somme.
We bake some Anzac Biscuits in remembrance of them. These Biscuits can be baked all year round too as it is New Zealand's favourite Biscuits. For those of you who may be interested, further details about ANZAC day can be found on the link below:

Ingredients:
2 cups Plain flour
2 cups Rolled Oats
2 cups Coconut
1 cup Chopped Apricot (optional- original recipe without this)
1 1/2 cups sugar or reduce to 1 ¼ cups sugar if you prefer less sweet
200g butter
4 tablespoons Golden Syrup
2 teaspoon Baking Soda
1/2 cup boiling water

Instructions:
1. Pre heat oven to 180°C fan bake. Lined baking tray with baking paper or grease with oil.
2. In a mixing bowl combine flour, rolled oats, coconut and sugar and make a well in the middle.
3. Place butter and syrup in a small saucepan and heat gently till melted. In a separate small bowl add boiling water to baking soda then pour into butter and golden syrup. Pour the foaming mixture into the dry ingredients.
4. Mix well and place teaspoon size balls on a lined tray with a little space in between to allow for spreading.
5. Press gently with a fork to flatten slightly.
6. Bake for 15-20 minutes till dark golden brown.
7. Use a spatula to remove Biscuits to a cooling rack.
8. When cold, store in air tight containers, which will keep for up to 2 weeks if they last that long! 😊 .
