Grandma's Prosperity Cup Cake (Fa Gao) for Chinese Lunar New Year - Gluten Free Recipe

Grandma always makes prosperity cakes to celebrate the Chinese New Year.  This recipe makes 5 single serving cakes (cupcakes/muffin size).  When the cake is steamed, the cake blossoms into a smiley crown, a symbol of good luck, health, happiness, and prosperity.
Best of all, it's easy to make and it's gluten free, diary free, and contains no eggs.   Enjoy!
