Garfish Coubion

Ingredients :
5 to 7 garfish steaks
1tbsp butter
3 shallots chopped
1/2 cup green onion
1/2 cup red bell pepper
1/2 cup green bell pepper
2 cloves garlic chop
1/2 cup chopped fresh parsley


After sautéing onions add
1/2 cup stock
1 cup whipping cream
1 can cream of mushroom soup
1 tbsp black pepper
2 tbsp Cajun seasonings
3 tbsp garlic pow
3 tbsp onion pow
1/4 cup lemon juice
1 tsp paprika
2 tbsp tomato paste ( add 1/2 tsp sugar - optional)
Thicken gravy then add
Seasoned garfish steaks

On low heat-cover
Cook fish for 7 mins one side
7 mins other side
Simmer for another 10 -15mins
To thicken gravy and tenderize fish

Serve over rice, potatoes or grits
