Hello there everybody, it's  Zeke the blind man coming to    you from the Louisiana  wild side. LOL. Today I'm showing you how  to prepare garfish  that has been grind up to make garfish  balls. This is not everybody's favorite fish but a lot of us love it in Louisiana. This was a 110 pound alligator gar fish that we caught in Hackberry, Louisiana. A fish that big can be prepared in so many ways. A garfish  roast, you can fry it, you can smother it, you can make gar fish balls, and you can grill it. I hope you all enjoyed the video and I will post me cooking it also. This is part one.
Ingredients: 3 pounds ground garfish, 2 medium  boiled mashed  potatoes, 1/2 Cup breadcrumbs, 2 eggs, 1/2 chopped  Red bell pepper, 1/2 chopped  Green bell pepper, 1/3 Cup chopped parsley, 4 cloves  finely  chopped garlic, 1/3 cup chopped onion, 1 cup chopped green onions/scallions, 3-4 teaspoons of your favorite Cajun or creole seasoning, 1 1/2 teaspoon white pepper, 1 1/2  teaspoon black pepper, 3 teaspoons onion powder, 2  teaspoons garlic powder, and 2 teaspoons  lemon pepper. Roll up a small sample ball and fry it or bake it to make sure that it is seasoned to your liking. Use an ice cream scooper to scoop your balls so they will all be the same size. Roll and place on a tray.
