Fats are the essential elements of our body.  But in case of over intake or unbalanced intake, they will lead to over weighted and heart disease.  Trans fat is harmful to our body.  If we eat it, our low density cholesterol will increase and high density cholesterol will decrease which in turns causing heart disease.  Different countries banned the use of trans fat.  Therefore, the chance of intaking trans fat from the pre-packed foods is lower and lower now.  However, small amount of trans fats will be produced when ordinary cooking oil is used for high temperature stir-fries or fries.  If that oil being used for several times, the trans fat amount will be accumulated to a high level.  Saturated fats will increase low density cholesterol level.  Although there is no solid prove that saturated fat will cause heart disease, American Heart Association recommended that the amount of saturated fat should be lower than 10% of the daily calories intake.  There are three kinds of saturated fats depending on the length of the carbon chain.  They are short chain saturated fat, medium chain saturated fat and long chain saturated fat.  Because medium chain saturated fat has better water solubility, bile salt is not required for emulsification.  It can be digested by pancreatic lipase and transported through the Hepatic portal vein to the liver directly and then turning to the energy source for our body.  Because this digestion process is very fast, people eating medium chain fat will feel full quickly so that they will trend to eat less and losing weight.  Coconut oil having 85.1% long chain saturated fats, 14.2% medium chain saturated fats and 0.59% short chain saturated fats.  Intaking coconut oil is less preferred than consuming those products that extracted the 100% C8-C10 of medium chain saturated fats.  These products are available in the market.  The most healthy fat is unsaturated fat that containing three kinds, Omega 3, Omega 6 and Omega 9.  Omega 3 & 6 cannot be produced by ourselves whereas omega 9 can be.  Therefore, omega 3 & 6 must be absorbed thought our diet.  The most preferred omega 3 to 6 ratio is 1:1 to 1:4.  But our diet nowadays causing an unbalanced ratio of very high in omega 6.  Omega 6 trend to cause inflammation and omega 3 trend to reduce inflammation. If we intake too much omega 6, our inflammation index will be increase which will increase our body weight and also increase the possibility of heart disease.  Olive oil and avocado oil contains more than 70% omega 9. Omega 9 is a healthy oil and it can reduce the risk of heart disease.  So, you may consider to change to these two oils.
