Cucumbers in the garden are really starting to produce well. So many that we can't eat them all, so I decided to make dill pickle relish out of them.
I doubled this recipe.

3 lbs pickling cucumbers diced small
1 large onion diced
1/4 cup canning salt
4 cloves garlic minced
(in a large bowl for 1 hour then rinse)

Brine
3 cups white vinegar
1/4 cup sugar
2 tsp dill seed
2 tsp mustard seed
2 tsp Celery seed
1/2 tsp Tumeric
(I added 1/2 cup of salt to my Brine, altho the recipe doesn't call for it, taste before and you decide)
(boil 10 minutes then add cucumber mixture and bring back to a boil for 10 minutes)

Jar it all up, 1/2 inch headspace, clean rims, seal and process 10 minutes in a waterbath canner.

4 pint canning jars, lids, rings.
