Urad dal tadka, a Punjabi dhaba style dal tadka made with urad dal or skinned whole black gram. Have it with roti or rice. Do try it and let us know how you like it.

Ingredients
(for boiling the dal)
about 1 liter water
3/4 cup skinned whole black gram/dhuli sabut urad dal soaked in water for 1 hour & then water drained out
3-4  granules of hing/asafoetida
1 tsp or to taste salt
1/2 tsp turmeric powder
1-1.5 inches ginger piece, peeled & grated

(for the tadka/tempering)
2-3 tbsp desi ghee/clarified butter
1 medium sized onion,chopped
1 medium sized tomato, chopped
3-4 garlic cloves, chopped
3-4 tbsp chopped hara dhania/cilantro
1 tsp kasuri methi/dry fenugreek leaves
2-3 dry whole red chillies
1/2 tsp coriander powder
1/2 tsp deghi mirch/red chilli powder
1/2 tsp garam masala
1/2 tsp jeera/cumin seeds

Method
1. to the pressure cooker add the urad dal, water, grated ginger, salt, turmeric powder & hing
2. close the cooker. keep heat on high and at the first whistle put off the heat
3. let the pressure subside then open the cooker. check the dal. it will be soft
4. keep the dal on medium heat as the dal will need to be cooked till the water & dal merge as one
5. while the dal cooks prepare the tadka.
6. keep tadka pan on medium heat. add 3-4 tbsp desi ghee & keep heat on medium. at regular intervals keep stirring the dal as it cooks
7. when the oil is hot add the chopped onions & saute till it tuns light pink about 1-2 minutes. if the dal & water have merged together reduce heat to low.
8. once the onions turn pink add the garlic & saute for about 1/2 a minute.
9. add the kasuri methi, whole red chillies & jeera and sute for another 1/2 minute
10 add the tomatoes. stir & add the deghi mirch, coriander powder & garam masala. mix well cook till the tomatoes turn soft/leave oil
11. while the tatomatoes are cooking add some haradhania to the dal & stir mix.the dal is of the consistency we want linking we will put off the heat
12. the tadka too is ready. pour half of it in the dal & mix well
13. transfer the dal to a serving bowl. garnish with the remaining tadka & some chopped cilantro
