Nagpur style Saoji Chicken
In a bowl take 1 kg curry cut chicken
Add 1 Tsp Salt
Add a pinch of turmeric
Add a drizzle of sesame oil
Mix well and set aside in chiller for an hour

For Saoji Masala :
2 Tsp Black Pepper Corn
2 Tsp Pathar Ka Phool or Stone Flower
2 Tsp Cumin seeds
2 No Black Cardamom
5-6 Cloves
1 No Long Pepper or Peepli
4-5 Kashmiri Red Chili
4-5 Bora Chili ( Optional)
2 No Bayleaves
1 Tsp Star Anise
1 Cinnamon Stick
Few Mace Strands
4-5 Green Cardamom Pods
1 Tsp Methi Dana or Fenugreek Seeds
3 Tsp Khus Khus or Poppy Seeds
3 Tsp Coriander Seeds
3 Tsp Fennel Seeds
Broil the spices over low heat
To this add a charred piece of Dry Coconut
Broil the spices together
Cool the broiled spices and powder them in a grinder
Grind the spices to a fine powder
Transfer the blend to a container and you can store in an air tight container for later use
In a kadai take some ghee and heat it
Add 2 sliced onions to it
Saute the onions
Add 2 green chilies
Add sliced ginger
Add chopped coriander leaves
Saute the ingredients together
Add 3 Tsp of Saoji Masala
Cool together till the onions turn brown
Add little water to deglaze
Mix as you deglaze
Cool the onion mix and make a paste in a grinder

In the same kadai heat some oil
Add a pinch of Turmeric Powder
Add 1 Tsp Deghi Mirch Powder
Swirl the spices in the Kadai
Add 1-2 Tsp Ginger Garlic Paste
Saute the paste
Add the onion paste
Cook the onion paste along with the spices and ginger garlic paste
Add 4-5 Tsp of Saoji Masala
Mix well
Add 1-2 Tsp Ghee
Mix well
Add the marinated chicken
Mix it in the cooked onion paste
Mix well and cook the chicken along at the same time
Add water and allow the spices to mix well
Add Salt to taste
Add 1 Tsp Sugar
Add lemon Juice ( 3 Lemons)
Cover and cook for another 15 minutes over low heat
Serve Hot with Chapati or Rice Bhakri
