This Nagpuri Style Saoji Chicken Curry is a delicious and easy dish that you can make in no time at all! It's perfect for a quick and easy weeknight dinner, and it's perfect for anyone who loves chicken curry!

Ingredients for Saoji Chicken Curry:

(Tsp-Teaspoon; Tbsp-Tablespoon)

Chicken - 500 grams (curry cut with bones)

To Make Saoji Masala Paste:

- Coriander Seeds- 4 tbsp(15-17 gms)
- Fried Chana Dal (Phutna) 2 tbsp(15- 18 gms)
- Rice- 2 tbsp (24-26 gms)
- Sesame seeds- 1 tbsp (10 gms)
- Cumin Seeds- 2 tsp
- Cinnamon- 4 small pieces
- Cloves- 7-8
- Shah jeera- 1.5 tsp
- Green Cardamom-5
- Black cardamom- 4
- Black Peppercorns- 12
- Jaiphal- 1/2
- Star Anise-1
- Bay leaf- 3
- Dagad Phool/Pathar Phool- 2 tbsp (Stone Flower)
- Byadgi red chili- 8
- Dry coconut or Khopra- 3 tbsp grated
- sliced onions- 2 medium-sized

Other Ingredients:
- Bay leaf-2
- Turmeric powder - 1/2 tsp
- Red Chili Powder- 3 tsp
- Saoji Masala powder- as prepared in the mixer grinder
- Ginger garlic paste- 4 tsp
- Salt- 2 tsp
- Water 450 ml
- Olive oil - 3-4 tbsp

Preparation:

- Heat a pan and first add all the listed ingredients listed to make Saoji Masala Paste.
- Dry roast on low heat for 5 mins.
- Lastly, add finely sliced 2 medium-sized onions to the pan. Fry until onions are slightly brown on medium heat.
- Set aside on a plate to cool.
- Take a grinder and add the roasted whole spices and onions. Grind it and make the Saoji Masala Powder.
- Add around 300 ml of water to blend them into a thick fine Paste. Saoji Masala Paste is now ready.

How To Cook:

- Heat oil in a curry pan and add the bay leaves. Sprinkle red chili powder and stir for 45 seconds on the lowest heat. Add the chicken pieces.
- Add turmeric powder, 2 tsp salt, give a mix and fry on high heat for 3-4 mins. Mix and fry on medium heat for another 10 mins till the pieces turn brown.
- Add the ginger garlic paste, mix, and keep frying for 8 mins. on medium heat until the raw smell is gone.
- Now add the Saoji Masala Paste and give a mix.
- Mix and fry on medium-low heat for around 10 mins till the masala is fried well and the oil separates.
- Add 450- 500 ml water, give a mix, and cover & cook on low heat for around 15 mins till the chicken is tender and the oil separates.
- Serve with plain white rice or roti.
