Ingredients for Chicken Bhuna Masala:

(Tsp- Teaspoon; Tbsp- Tablespoon )

For Marination:
500 gms chicken with bone
½ Tsp salt
½ Tsp Turmeric
1 Tsp Red chilli powder
2 Tbsp Oil

For the Bhuna masala powder:
1 Tsp coriander seeds
1 Tsp fennel seeds (sauf)
7-8 peppercorns
3-4 cardamom
1 black cardamom
3-4 cloves

Tempering:
1 Tsp cumin seeds
3-4 red chilli
1-2 bay leaf

Other Ingredients:
3 medium chopped onion (200 gms)
1 tbsp ginger garlic paste
2 medium chopped tomato (200 gms)
1 tsp red chilli powder
Salt to taste
1 cup whisked curd
3-4 tbsp fresh coriander
1/4 tsp kasturi methi (roasted & powdered)
Oil for cooking

Preparation:

1. To marinate the chicken, add chicken, turmeric, red chilli powder, salt and oil. Mix it well and marinate for 30 minutes.

2. To make the Bhuna Masala Powder, heat a pan and add coriander seeds, fennel seeds, peppercorns, cardamom, black cardamom and cloves. Dry roast the whole spices on low heat for 2 minutes. After roasting add these spices to a grinder/blender after cooling. Grind it to a fine powder. Set aside to use in chicken bhuna masala.

Process:
1. To fry the chicken pieces, heat frying pan and place the chicken pieces side by side.

2. Mix and keep flipping and frying the chicken pieces on medium heat for 8-10 mins till browned.

3. Switch off the heat and set the pan aside.

4. Now heat oil in a wok/ kadhai and add the tempering. Give a stir and then add the finely chopped onions. Mix and fry on medium heat till the onions are light brown in colour.

5. Now add the ginger garlic paste and fry on medium heat for 2 mins.
Now add the chopped tomatoes and cook for 2-3 mins on medium heat.

6. Add red chilli powder and salt to taste. Give a mix and fry on medium heat for around 7-8 mins till the tomatoes are mashed and oil separates.
Now add the fried chicken pieces and fry for 2-3 minutes on high heat.

7. Add bhuna masala powder and fry for around 4-5 mins on medium heat till the chicken is well coated with the masala.

8. After that add the whisked curd/yogurt. Mix it well and cook on medium heat for 3-4 mins. till oil separates.

9. Now cover & cook on low heat for 12 mins till the chicken is tender. Let chicken cook in its own juices. (You can remove the lid midway, give a stir and place the cover again)

10. Remove lid, add kasuri methi and coriander leaves.
Give a mix and simmer for 2-3 mins.

Serve with roti or rice.
