Rhubarb Jam Sugar Free
Rhubarb is naturally low carb and keto friendly.
A half cup of rhubarb has 1.7 net carbs. I have adjusted my stewed rhubarb into a simple tasty low carb spreadable jam.  Sugar free rhubarb jam is tasty on my keto scones.

Ingredients:
2 cups rhubarb chopped into 1" pieces
½ cup powdered erythritol or allulose
2 tsp. orange zest (Sorry I said lemon zest in the video.)
1 tsp. fresh lemon juice.
½ cup water
2 tsp. beef gelatin
2-3 - 250 mil jars sterilized

Directions:
Add water to a saucepan and bring to a boil.
Stir in gelatin and sugar to dissolve.
Stir in lemon juice and orange zest.
Add in rhubarb, stirring often.
Cook until the rhubarb is broken down and starting to get thicker, about 10 minutes.
Mash with a potato masher to desired consistency. I like mine chunky.
Scoop into clean sterilized jars.
Store in the fridge when cooled.

Notes: This jam can be frozen.
This rhubarb jam will thicken as it cools into a smooth spreadable jam.
Using 1 tsp. Of gelatin will give you a runnier jam.

Beef gelatin is also great for making jellies.
