I wanted to share with you my mid winter thoughts and crafts and to ask you what can you do to make your life simpler.

I have made my own winter decorations and really enjoyed the process. The recipe for my mincemeat can be altered to suit you if you enjoy certain dried fruits or nuts they can be added and if you want to add more spice or brandy then you have that choice. Also I have added vegetable suit, this helps cook the fruit, I haven't tried it without however I believe you can leave it out. I also think the suet is a left over ingredients from when the recipe was savoury.
So simple recipe;

1.3 cooking or eating apples peeled and grated
1 orange zest and juice
600ml ginger wine
450g brown sugar
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon cloves
300g shredded suet
450g raisins
450g currants
225g glazed cherries
100ml brandy

place, apples, juice, zest and wine in a large pan. bring to the boil then reduce and simmer for 10 minutes. Stir in sugar, spices, and dried fruits, not cherries. When the sugar has dissolved  remove from heat and stir in cherries. Allow to cool completely and stir in brandy. Place  into sterilised jars and cover.
If you can make a few weeks in advance this will increase the flavours but dont worry if you cant it will still taste lovely.

Use a shortcrust pastry for the cases. Roll thinly and place the mincemeat in the centre as in the video. Pop in the oven, 170 degrees C/350degrees F for about 15 minutes or until golden brown. The middle shelf will be perfect.
