Ingredients 😊
For the crust :
130 g Digestive/ Almond Biscuits
60 g unsalted butter, melted
1 tbsp granulated sugar
45 g roasted pecans (optional)


For the cheesecake filling :
500 g full fat cream cheese at room temperature
120 g full fat sour cream at room temperature
3 eggs + 1 egg yolk at room temperature
285 g granulated sugar
2 tbsp plain flour
1 tsp vanilla extract
1 lemon + 1 tbsp fresh lemon juice
275 g fresh blueberries


For the Blueberries & Blackberries topping :
75 g frozen blueberries
300 g frozen blackberries
100 g granulated sugar
2 tbsp lemon juice + 1/2 tsp vanilla extract
1 tbsp cornstarch + 2 tbsp water
