The reaction mechanism for forming an acetal (or ketal) from an aldehyde (or a ketone) requires seven steps.  The mechanism is completely reversible - every step.  One, protonate the carbonyl.  Two, attack the carbonyl with an alcohol.  Three, deprotonate the oxygen that was part of the alcohol.  Four, protonate the oxygen from the carbonyl.  Five, eject the water group with a lone pair from the former-alcohol oxygen.  Six, attack with another alcohol.  Seven, deprotonate the second alcohol oxygen.
