Eggs in Chile Guajillo Breakfast

Today we are making a simple breakfast dish that has been one of my favorites since childhood. My mom would prepare her eggs this way and use them as stuffing for gorditas. Chiles de Arbol
2 Roma Tomatoes
1-2 Garlic Cloves
1/4 Onion
Cooking Oil of your choice
Sprig of Epazote (Optional)
Salt & Pepper to your taste
