Making Brinjal chutney with my garden produce

I had a bumper crop of brinjals as well as chillies and other vegetables I had planted in my garden. I made a simple brinjal chutney that goes very well with fresh roti!

Ingredients
3 medium brinjals
1/2 cup oil
6-8 cloves of garlic
1 medium onion finely sliced
2 tomatoes, chopped
2 green chillies
1 tbs mixed masala
1 tsp fine salt
1/2 tsp sugar
spring onion and dhania to garnish

1lt water with a tsp fine salt to soak the cut brinjal in and avoid it becoming brown
