Step by step recipe to make soft and melt in your mouth Dahi Vada also known as Dahi Bade. These are basically deep-fried fritters made from chickpea flour and soaked in thick yogurt sauce. It is a popular chat item originated in Indian subcontinent, but variations of it are available all over South Asian countries. Enjoy!

Dahi Vada is a must have when it comes to Iftar (breaking fast) during the month of Ramadan.

Ingredients for Vada:
• Besan (Chickpea Flour) – 1 Cup
• Salt – ½ tsp
• Red Chili Powder – ¼ tsp
• Coriander Powder – ¼ tsp
• Turmeric Powder – 1/8 tsp
• Ginger Garlic Paste – ½ tsp
• Green Chili (Finely chopped) – 1
• Coriander Leaves (Finely chopped) – 1 tbsp
• Baking Soda – 1/8 tsp
• Oil for frying vadas

Steps:
1. Add all ingredients to besan (chickpea flour) and mix it well so that all spices are distributed well into the flour.
2. Add about half a cup water gradually and mix it into a pouring batter consistency. It should not be too thick or too thin.
3. Place a pan on high heat and add enough oil to deep fry vadas.
4. Take warm water in a bowl and add a tsp of salt to it. We will soak our vadas in this water for a minute after frying them.
5. Once oil heats up, using a spoon, pour batter into oil and fry vadas until golden brown in color.
6. Once coked vadas will have beautiful golden-brown color and should feel light.
7. Take vadas out of the oil and put them into water directly. This step helps in keeping vadas soft and moist for a long time.
8. After soaking in water for a minute, take them out of the water. Press them slightly between palms to remove excess moisture and arrange them in a serving dish.

Ingredients for Dahi:

• Yogurt – 1 Cup
• Salt – ½ tsp
• Cumin Seeds – 1 tsp
• Dry Red Chilis – 5
• Curry Leaves
• Vegetable Oil – 2 tbsp

Steps:
1. Add salt to yogurt and whisk it until smooth.
2. Add half a cup of water and continue mixing until it is smooth.
3. Pour this yogurt sauce on top of vadas until they all are covered in it and let them soak in yogurt sauce.
4. Place a pan on medium heat and add oil to it.
5. Once oil heats up, add cumin seeds and let them fry until they change in color.
6. Once cumin seeds start to splutter, add dry red chilis and continue cooking.
7. Once red chilis start to turn dark in color, turn the heat off and add curry leaves.
8. After stirring it for 30 seconds, tempering is ready to pour on top of dahi vadas.
9. Serve Dahi Vadas as a snack or side dish with a meal. ENJOY!
