Beef Cheeks, or Barbacoa, are
Beef Cheeks, or Barbacoa, are an often overlooked cut of meat. In this video I take a Wagyu grade of this cut, supplied by Wodagyu, and smoke it up on the Weber Kettle. Then, instead of going traditional and using it in tacos, I pile it on some terrific bread with shredded horseradish cheddar cheese to make a Smoked Barbacoa Grilled Cheese Sandwich.
