Simple, melt in the mouth and delicious Low & Slow BBQ Smoked Beef Cheeks with a Pedro Ximinez sauce, served in tasty taco’s. Cooked on the Weber Kettle
This 'How to' video goes through all stages of making delicious, fall apart Beef Cheeks on the Weber Grill. It covers
- Trimming
- Rubbing
- Setting up the Weber Kettle
- Indirect Cooking
- Foiling
- Checking the perfect doneness
- Pulling Apart
I cooked the Beef Cheeks in Pedro Ximenez which is a sweet Spanish Sherry. This created a delicious sauce once the Cheeks had been pulled.
The Cheeks were served in soft Taco's with Lettuce, Guacamole, Salsa and Sour Cream.
The cook was done at 275-300f
2.5 hours indirect until 165f internal
3.5 hours foiled in a tray with the Pedro Ximenez
Served as Taco's
We often also serve this with a Cauliflower Puree, made from Cauliflower, Cream and Butter. Hand blended
You can use different liquids in the braise. You can try different beers, such as Porter, Stout, IPA etc and you can also add a dollop of honey for some sweetness.
