On a daily basis, 82-year-old Uncle Chua cycles to Amoy Street Food Centre, for his fried kway teow hawker business. He started learning the ropes at the age of 17 as an apprentice, and started his business in 1968 at Boon Tat Street. The business has been ongoing for more than 5 decades. Unfortunately, there is no next generation after him to take over the business.

Many hawkers are the older generation who did not have a chance to receive a proper education when they were young, and came out at a young age to make a living through the hawker business. The only goal was to survive the tough times.

Amoy Fried Kway Teow has a distinct Wok Hei aroma that comes from the intense heat used to stir fry. At high temperatures, there is a caramelising of sugar in the dark soy sauce that contributes to the smoky flavours of the dish. A touch of lime juice adds a tang and enhances the charred flavours.
