Thirty Minute One Pot Chicken Stew

This is the best chicken soup recipe when craving simple comfort food or feeling under the weather. This one-pot chicken recipe is made with bone-in chicken thighs and drumsticks. And it can be ready in just 30 minutes!

Ingredients:
- 5-6 lbs of bone-in chicken thighs, drumsticks, or a combination of both
- Salt and pepper as needed
- Olive oil or your preferred cooking oil
- 2-3 Roma tomatoes
- 1/2 white or yellow onion
- 2-3 garlic cloves
- Handful of cilantro
- 6 cups of water, chicken, or vegetable broth
- Chicken bouillon
- 2-3 ears of corn
- 2 large carrots
- 2 large potatoes
- 3 stalks of celery
- One large Mexican squash or zucchini
- Limes and serrano slices for garnishing
