Easy Pasta Chicken Salad Recipe

Prepare this tasty chicken salad using rotisserie chicken or leftover chicken or by preparing it ahead of time using a quick and easy method.

I prepared the chicken for this dish by cooking it in a small amount of olive oil. Alternatively, boil the chicken with onion, garlic, bay leaf, and salt.

Ingredients for the preparation of the chicken:
- One Boneless Chicken Breast
- Salt, pepper, paprika, and garlic powder
-1-2 Tbsp Olive Oil

Ingredients for the salad:
- 1 cup of your preferred pasta
- 2 medium Yukon Gold potatoes
- 2 medium carrots
- 2 stalks of celery
- One Cup Frozen Peas
- 1/2 cup of Mexican sour cream
- 1/2 cup of mayonnaise
- 1 tbsp of olive oil
- 1 tsp of garlic powder,  onion powder, and Crushed Mexican Oregano
- Salt and pepper to your preference
- One Tbsp of mustard
- Juice from one lime
- 1/4 cup of diced pickled jalapeños
- 2 tbsp of juice from the pickled jalapeños
