Asado de Boda - Wedding Stew

Asado de boda is a traditional stew originating in Mexico and is especially popular in Zacatecas. It consists of pork such as boneless pork butt or pork shoulder. The sauce is prepared with guajillo chile and ancho chile, and if you like it spicy and sweet, add a handful of chiles de arbol. Seasoned with a variety of spices and other ingredients.
Once done, the wedding barbecue is served with Mexican-style rice and warm corn or flour tortillas.

Ingredients
4 Pounds of Boneless Pork Ribs or Pork Loin
6-8 Guajillo Chiles
3 Ancho Chiles
Chiles de Arbol to your Taste
4-5 Garlic Cloves
1/2 White Onion
5-6 AllSpice Berries / Pimineta Gorda
5-6 Cloves
1 Piece of Cinnamon
5 ounces of Piloncillo
6-8 Animal Cookies or Maria Cookies
Mexican Chocolate disc
1 Cup of Orange Juice
4 Cups of Water or as needed
'Chicken Broth to add more flavor
Orange Peel Half Orange
2-3 Bay Leaf
Salt and Black Pepper to Taste
Vegetable Oil or Manteca (Lard)
