Anda Curry
Ingredients   quantity
Boiled eggs   4 nos
Red chilli powder  1 tsp + 1 ½ tsp
Turmeric powder  ¼ tsp + a pinch
Salt    to taste + to taste
Oil    3-4 tbsp
Cumin seed   1 tsp
Bayleaf    1 nos
Red chilli whole   2 nos
Onion chopped   2 nos
Ginger garlic paste  1 ½ tsp
Tomato chopped  3 nos
Coriander powder  1 ½ tbsp
Garam masala   ½ tsp
Egg (raw)    1 nos
Ginger julienne   1 inch
Green chilli     2 nos
Water    1 cup
Coriander chopped  1 tbsp + for garnish

Method :
1. Take boiled eggs and make a small cuts all over it .
2. In a bowl add eggs , red chilli powder ,turmeric powder , salt and mix it well .
3. Heat a kadhai , add , marinated eggs and fry it for 30 seconds .
4. Transfer it in a small bowl  and keep it aside .
5. Now add cumin seed , bayleaf ,red chilli whole allow it to splutter .
6. Now add chopped onion and sauté it for 3-4 mins .
7. Now add ginger garlic paste and mix it well and  cook it for 1 min .
8. Now add chopped tomato , salt and sauté it for 3-4 mins .
9. Add chilli powder , turmeric powder , coriander powder , garam masala  and mix it well for 4-5 mins on low flame  .
10.  Meanwhile take raw egg and whisk it using fork a min .
11. Now add ginger julienne , green chilli chopped and mix it well .
12. Now add water and allow it to cook for 3-4 mins .
13. Now add whisked egg and give nice stir for 1 min .
14. Add chopped coriander leaves , boiled egg and mix it well .
15. Transfer it to serving bowl , garnish with coriander leaves and ginger julienne   .
16. Serve hot .
