My in-laws grow some of the best corn I have ever eaten so I save seed from their corn to grow and it is so good!
For this recipe I used:
3 cups fresh corn kernels
1/2 cup flour
1/4 cup chopped chives
2 T shredded parmesan cheese
salt/pepper
1 egg
1/2 cup plus 1 Tablespoon oil


Blend 1.5 cups of corn to puree it. Add the whole kernels to a hot pan with 1 T of oil in it. Cook 4 minutes then remove to a mixing bowl. Add pureed corn to the hot pan and cook for 3 minutes. Add pureed corn to the mixing bowl.

To the corn add the flour, chives, parmesan cheese, salt, pepper and egg. Mix well.
Clean your frying pan and add 1/2 cup oil. Heat oil. Drop 2 tablespoons of corn mixture per fritter and gently spread it out.
Cook for 3-4 minutes per side, flip and cook for another 3-4 minutes.

Serve with sauce of your choice.
The sauce I made was:
1/4 cup mayo
1/4 cup chipotle mayo
1 tsp dijon mustard
1 T pure maple syrup

I hope you can give this recipe a try. It is my understanding that frozen corn kernels will work well for this.
