Stir-Fried Chicken & Rice Noodles
Stir-Fried Chicken & Rice Noodles - Chinese Style Recipe
Welcome to Xiao's Kitchen. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia, in the northern part of China, where I visit each year and learn new Chinese recipes.
Ingredients:
200g Ribbon Rice Noodles (soak in warm water until soft then drain)
250g Chicken Breasts (cut into thin strips)
200g Broccoli (cut into bite-size pieces)
3 Cloves Garlic (finely chopped)
2 Eggs (break in a bowl & whisked)
3 Tbsp Peanut Oil
2 Tbsp Light Soy Sauce
½ Tsp Coarse Black Pepper
Salt to Taste
Method:
1. Heat half of the peanut oil in the wok over high heat
2. Place chicken in the wok and stir-fry for 3 minutes
3. Add the garlic, a pinch of salt, black pepper and then stir
4. Add the broccoli and continue to stir fry for a minute – cook longer if you like your vegetable soft
5. Add the soy sauce and stir. Remove from wok into a dish for later. Clean the wok
6. Heat the rest of the peanut oil in the wok over high heat
7. Pour the egg mixture into the wok, stir and cook until the egg is cooked
8. Add the well-drained rice noodles and stir
9. Return the chicken and broccoli in the wok, stir-fry for a minute
10. Transfer into a dish and serve hot
