• १ कप गव्हाचं पीठ

Today’s recipe is traditional Marathi recipe Gulpoli. This is Makar Sankrant special recipe. This poli turns out nice and crispy and also the stuffing reaches till the edges of the poli when you roll it. You also will get lot many tips in the video. We will make gul or stuffing for gul poli. This is one of easiest methods I have come across. We already have seen few Sankrant special recipes. This is yet another delicious addition to the list. This poli contains gul or jaggery and til or sesame seeds. Both provide necessary warmth to body in winter.

Ingredients:
Dough
• 1 cup Wheat flour
•  1/2 cup Maida
• 1/4 cup fine Rava / Suji
• 2~3 tbsp Besan
• A pinch of Salt
• 3~4 tbsp Oil
• Water as needed
Stuffing
• 2~3 tsp Besan
• Oil as needed
• Water as needed
• 1/2 cup Gudh / Jaggery
• 1/2 tbsp Oil
• 1/4 cup roasted Peanut powder
• 1/4 cup roasted Sesame seeds powder
• Cardamom powder
Gulpoli
• Rice flour

Method:
Dough
• Mix wheat flour, maida, rava, besan, salt and oil well together and add a little water at a time to
 knead little stiff dough.
• Cover and rest the dough for about 30 minutes.
Stuffing
• Heat up a pan on medium heat and add besan.
• Roast the besan well and add oil.
• Mix well and roast it together until it changes the color and keep it aside.
• Heat up water in a pan and add gudh.
• Mix well and let the gudh melt.
• When gudh melts completely, turn off the gas and add oil.
• Mix well and add roasted peanut powder, roasted sesame seeds’ powder and roasted besan.
• Mix everything well together and add cardamom powder.
• Mix well and let the mixture cool down a little.
• Knead the mixture well when the mixture is still warm and stuffing is ready.
• If needed you can use a little oil while kneading the stuffing.
Gulpoli
• Make small balls from the stuffing.
• Knead the dough once again and take small portion form it.
• Make two equal portions of it and make them smooth and even.
• Dip them in rice flour and roll out 2 small discs. Sprinkle a little rice flour on the stuffing ball and
 place it on one of the discs.
• Cover it with another disc and seal the edges.
• Roll poli from it carefully.
• If the stuffing doesn’t reach till the edge, then cut it off.
• Heat up a skillet on medium heat and transfer the poli on it.
• Roast it well from both sides on medium heat.
• When the poli is roasted well from both sides, take it off on a wire rack. Gulpoli is ready.
