It's lemon season in these days.
This is very easy recipe to make LEMON tart that is so refreshing.
Ingredients for Lemon Custard Cream
==================
Zest of 1 lemon
1/4 cup lemon juice (60ml, 60g)
Half a cup of sugar (120ml, 100g)
1 pinch of salt
1 egg + 2 egg yolks
1/3 cup of milk (80ml, 80g)
1 tablespoon (15ml, 8g) of corn (potato) starch
50g unsalted butter
Pie Crust Ingredients
==================
All-purpose flour (soft flour) 1+1/4 cup (300ml, 185g)
3 tablespoons of sugar (45ml, 36g)
1 pinch of salt
1/4 cup almond meal (60ml, 30g)
100g room temperature unsalted butter
1 egg (50g)
1st pie ; 180 (355 F) degree convection (fan forced ) for 16 minutes
2nd tart; 10 more minutes
