Hello, dear friends! Today we will prepare a healthy cake without gluten and sugar.

Healthy cake without gluten and sugar.

A simple and quick to prepare cake, good for those who love something sweet but are watching their figure. This cake is healthy and dietary. I recommend trying it! I'm sure it will become one of your favorite cakes.

For the recipe we need:

*Eggs 5 pieces;
*Natural yogurt 270 grams;
*Maple syrup 120 grams;
*Vegetable oil 3 tablespoons;
*Oatmeal/rice flour 240 grams;
*Baking powder 1 teaspoon;
*Apricots 150 grams;
*Walnuts 120 grams (90 grams for dough + 30 grams for decoration)
*Dry/cooked poppy seeds (to taste) 40 - 120 grams.

For cream:

*Sour cream 200 grams;
*Maple syrup 40 grams.

1) Break the eggs into a deep bowl and add yogurt.
2) Add maple syrup and vegetable oil, and mix everything well.
3) Add oatmeal and baking powder. Mix everything well again.
4) Prepare the fillings for the layers: poppy seeds, chopped dried apricots, nuts. and pour into separate containers.
5) Pour the dough into three containers, in approximately the same quantity, and knead well.
6) Cover the bottom of the mold with parchment paper and grease with vegetable oil.
7) The first layer will be with dried apricots. Pour and distribute evenly over the mold.
8) Second layer with nuts. We also distribute it evenly over the form.
9) And the last layer with poppy seeds. Also distribute in an even layer.
10) Bake in a preheated oven at 170'C for 60 minutes.
11) Making cream:
Mix 200 grams of sour cream with 40 grams of maple syrup and mix well.
12) The cake is baked, let it cool a little. Decorate with cream and nuts. The cake is ready. Bon Appetit everyone!
