The dish is packed with protein-rich lentils, fresh spinach, and a rich tomato-based sauce, all brought together with warm spices like turmeric, coriander, and garam masala. Serve it with soft, fluffy rice or your favorite flatbread for the perfect plant-based meal. Whether you’re cooking for family or friends, this vibrant and creamy curry is sure to impress with its bold flavors and wholesome ingredients!

Ingredients:

• ½ cup rice
• 1 cup red lentils, washed and soaked in water for 1 hour
• 1 tsp vegan butter
• 1 pinch cumin seeds
• ¼ tsp salt
• 1 onion
• ¼ tsp salt
• 2 tbsp olive oil
• 2 tbsp finely chopped garlic
• 1 tbsp finely chopped ginger
• 1 tsp cumin seeds
• ½ tsp turmeric
• ¼ tsp garam masala (optional)
• ½ tsp ground coriander seeds
• 2 slices fresh lemon
• 1 tomato, finely chopped
• ⅓ cup tomato paste
• 2 cups vegetable broth
• 200 ml / ⅓ cup vegan cream
• 1½ cups spinach
• Salt and pepper to taste

Instructions:

1. Rinse the rice and cook it over medium heat with 1 cup of water.
2. After soaking the red lentils, drain the water and set aside.
3. In the pot with the rice, add 1 tsp of vegan butter, a pinch of cumin seeds, and ¼ tsp of salt. Let the cumin and butter infuse the rice with a wonderful aroma.
4. In a separate pan, heat 2 tbsp of olive oil. Add finely chopped onion with ¼ tsp salt and sauté until soft.
5. Add the chopped garlic and ginger, and continue sautéing for 1 minute.
6. Add 1 tsp cumin seeds, ½ tsp turmeric, ¼ tsp garam masala (optional), and ½ tsp ground coriander. Stir to release the spices’ aroma.
7. Add the tomato slices and ⅓ cup of tomato paste, mixing well.
8. Stir in the soaked red lentils and pour in 2 cups of vegetable broth.
9. Bring the mixture to a boil over high heat, then reduce the heat to low and simmer for about 30 minutes until the lentils are fully cooked.
10. Once cooked, stir in the vegan cream and spinach. Adjust salt, pepper, and lemon juice to taste.
11. Serve the lentil dish with the prepared rice. This dish is also delicious with naan or flatbread.
