Hello, dear friends! Today we will prepare "Craffin Easter cake".

Easter cake Kraffin.

For the recipe we need:

*Warm milk 400 grams;
*Eggs 8 pieces;
*Sugar 280 grams;
*Vanilla sugar 80 grams;
*Dry yeast 28 grams;
*Lemon zest 4 pieces;
*Soft butter 120 grams;
*Salt 1 teaspoon;
*Flour 1400 grams;

For lubrication:

* Butter (soft) 250-300 grams;
*Dried fruits 600 - 800 grams.

*All ingredients should be slightly warm or at room temperature***

1) Let's start by preparing the dough to check the activity of the yeast. Pour dry yeast into warm milk, about 1.5 tablespoons of sugar (from the total amount), and mix a little. Add about 9 tablespoons of flour (from the total amount), and knead everything well again. Cover with cling film and place in a warm place for 10-15 minutes.
2) Now, pour lemon zest, salt, remaining sugar and vanilla sugar into the eggs. Mix everything well.
3) The dough has risen, a lot of bubbles have appeared, which means the yeast is excellent. Transfer the dough to the eggs with sugar and add more flour.
4) Knead the dough. I have about 1200 grams of flour here, but we are adding it gradually. You focus not on the amount of flour, but on your dough. It is important not to overfill the dough with flour so that the baked goods are airy. The dough should be soft and slightly sticky. If the dough still continues to stick, you can grease your hands with vegetable oil.
Cover with cling film and place in a warm place to rise for about 1 hour. The dough rises well and has increased in volume. Mix the dough a little and divide it into parts, mixing each part a little with flour.
5) Roll out each part thinly (2 mm), grease with butter and sprinkle with dried fruits. We wrap the roll from the narrower side. Cut with a knife, do not cut to the edge. We twist it with the beautiful edge of the cut outward and transfer it to the mold. This is how we form all the cakes.
6) Place the cakes on a baking sheet and let them rise. Bake in a preheated oven at 170'C for 25-30 minutes.
7) Sprinkle the cooled, finished Easter cakes with powdered sugar.
