Patalia Chicken:

Ingredients

Boneless chicken    ½ kg cubes
Onion     2
Green chilies    4
Ginger garlic    1 tbsp
Coriander     2 tbsp
Mint leaves     10
Cashew nuts grinded   1 ½ tbsp
Coriander seeds crushed   1 tbsp
Cumin crushed    1 ½ tsp
All spice     1 tsp
Salt      1 tsp heaped
Yogurt     ½ cup
Cream    ½ packet

Ingredients for Garnishing

Ginger julienne    2 tbsp
Clarified butter   ½ cup
Onion chopped    1 cup
Coriander leaves    2 tbsp

METHOD

In a blender put all the ingredients from onion till cream and blend well, heat ghee, fry onion, then add the blended masala, fry well till ghee comes on top, add chicken with 1 cup water, cover and cook till done. Lastly garnish with ginger julienne and coriander leaves, serve with reshmi paratha.


Reshmi Makhani Paratha:

Ingredients

Flour    3 cups
Salt    ½ tsp
Sugar    1 tbsp
Powder milk  3 tbsp
Clarified butter ¼ cup
Baking powder  ½ tsp
Egg    1

METHOD

Put all the ingredients in a bowl, knead the dough with lukewarm water until smooth, leave to rest in fridge for 1 hour, then make into tiny balls, give layers as shown, re-roll, shallow fry on tawa in clarified butter very slightly, these parathas will be square.


Faluda:

Ingredients

Corn flour   1 cup heaped
Water   3 ½ cups
Milk    1 litre
Sugar    4 tbsp
Rose syrup   ½ cup
Vanilla ice cream  6 scoops
Basil seeds   2 tbsp soaked in 1 cup water for 3 mins

METHOD

Mix together corn flour and water, cook stirring continuously till thick and glossy, put in faluda press and remove in chilled water as shown.

TO SERVE

Mix the tukhmalanga seed in milk, divide milk into 6 glasses, add faluda in glasses, gently pour the rose syrup, put a scoop of ice cream on top of each glass, serve immediately.
