Mutton Roghan Josh:
Ingredients
Butter 500 gram
Mutton shanks 2kg
Onion slice 1kg
Ginger garlic paste 2 tbsp
Clove 12 pc
Coriander powder 2 tbsp
Black pepper corn 1 tbsp
Cinnamon stick 3
Bay leave 3
Large cardamom 4 pc
Turmeric ½ tbsp
Red chili powder 2 tbsp.
Kashmiri chili powder 2 tbsp
Mace powder ½ level tsp.
Nutmeg powder ½ level tsp.
All spice 1 tsp
Yogurt 500 gram
Saffron soaked in milk 1 gram
Method:
Heat butter in pressure cooker add clove, black pepper, cinnamon stick, bay leave, large cardamom, cook 1 minutes add sliced onions and cook again till soft and become yellow, add mutton and ginger garlic paste cook 6 minutes reduce mutton water add remaining spice and yogurt accept saffron and garam masala
Again cook 5 minutes know add 2-liter waster and cover it for 50 minutes till mutton become tender, know add garam masala and saffron cook 5 minutes on slow flame for fragrance
Served hot with nan
Bihari Beef Tikki Kabab:
Ingredients
Beef 1 kg
Ginger garlic paste 2 tsp
Red chili powder 2tsp
Turmeric powder 1tsp
Salt 2 tsp
Papaya paste 2 tbsp
Star anise powder 1 tsp
Whole spice 1 tsp
Tamarind pulp 3 tsp
Olive oil 2 tbsp
Mozzarella cheese 1 cup
Bread crumb 1-1/2 cup
Method:
Mixed all ingredients with meat and make a mince in chopper machine than add bread crumb mix well with hand
Know make a small bowl of meat stuffed with cheese shallow fried with medium flame and served it
Kurkuri Bhindi:
Ingredients
Lady finger 700 gram
Red chili powder 2 tsp
Salt 1-1/2 tsp
Red chili crushed 2 tsp.
Chickpea flour 8 tsp
Corn flour 3 tsp
Chaat masala 2 tsp
Method
Take a bowl add lady finger, all spices & flour to mix well then deep fried till it turns crispy.
Sprinkle Chaat masala and served it
Sindhi Siyal Machli:
Ingredients
Red Snapper Fish 2 kg
Onion Sliced 1 kg
Olive Oil ¾ cup
Salt 1-1/2 tbsp
Red Chili Powder 2 tbsp
Turmeric Powder ½ tbsp
Whole Spice ½ tbsp
Cumin Seed 1 tbsp
Ginger Garlic Paste 1 tbsp
Garlic Paste 2 tbsp
Method
Well, Mixed All Ingredients Together And Marinated Fish remaining marination Mixed With Onions And Keep Side
Know Take Piece Of Aluminum File Make A Bed Of Onion On Aluminum File Keep Fish On Onion And Top Of Fish Put Some Onion And Cover It Aluminum File And Keep For Roasting In Oven With 180c’ For 50 Minutes
