Ingredients:

* 1 cup mung dal (split green mung beans)
* 1 bunch fresh fenugreek leaves (methi)
* 1 teaspoon cumin seeds
* 1 teaspoon mustard seeds
* 1/2 teaspoon turmeric powder
* 1/2 teaspoon red chili powder
* 1/4 teaspoon garam masala
* 1/4 teaspoon salt
* 1 tablespoon oil
* 1/2 cup water

Instructions:

1. Rinse the mung dal and fenugreek leaves in cold water.
2. In a large pot or wok, heat the oil over medium heat.
3. Add the cumin seeds and mustard seeds. When the seeds start to pop, add the turmeric powder, red chili powder, garam masala, and salt.
4. Stir for a few seconds, then add the mung dal and fenugreek leaves.
5. Stir to coat the dal and methi in the spices.
6. Add the water and bring to a boil.
7. Reduce heat to low and simmer for 20-25 minutes, or until the dal is tender.
8. Serve hot with rice or roti.

Tips:

* If you don't have fresh fenugreek leaves, you can use 1 teaspoon dried fenugreek leaves.
* To make the dal more flavorful, you can add a few cloves of garlic and/or a small piece of ginger to the spices.
* You can also add some vegetables to the dal, such as carrots, peas, or potatoes.
* Serve the dal with some yogurt, chutney, or salad on the side.
