1. Heat the oil in a large skillet or wok over medium heat. Add the cumin seeds and coriander seeds and cook until they crackle.
2. Add the garlic, ginger, and onions and cook until the onions are softened.
3. Add the bitter gourd and cook for 5 minutes, or until it is softened.
4. Add the red chili powder, turmeric powder, garam masala, and salt and stir to combine.
5. Cook for 1-2 minutes more, or until the bitter gourd is cooked through.
6. Serve hot with rice or roti.

Tips

* If you don't like the bitterness of bitter gourd, you can blanch it in boiling water for 3-4 minutes before adding it to the stir-fry.
* You can also add other vegetables to the stir-fry, such as tomatoes, green beans, or peas.
* Serve with a side of yogurt or chutney for a refreshing and flavorful meal.
