This is a shortcut version of carne con papas cubano/ beef stew recipe. For convenience, I purchase frozen cut vegetables whenever possible. You can definitely cut up onions, mince garlic add carrots, olives and substitute any of the spices I used. I used my instant pot but you may also slow cook. This Carne Con Papas/ Beef Stew turned out so tender! It was delicious!
