Maturing sausage or brawn. It
Maturing sausage or brawn. It is not a question of what to do, but what I do, because it looks like a maturing sausage, and the recipe shows the procedure for such sausage.
However, the recipe's title, there is brawn mentioned, but this name in our kitchen usually means something else. The recipe is old, so maybe our ancestors understood diffrently what a brawn is. I'd like to invite you to deeper explore the subject.
One thing is certain, the end result looks like a plump sausage. It's delicious and very flavourfull. A home-made product worthy of the festive table. Regardless of whether it is a traditional maturing #sausage or a #brawn, this #recipe has been written down in my notes, and this place is particullarly highlighted in the notebook, so I can repeat this recipe and not to loose it.
