Stir Fry Udon Noodles With Pork. (Yaki Udon)

There doesn't seem to be hard and fast rules to the type of noodle you use, the veggies or even what goes in your sauce. I love this because each time I make it I try something different. Usually I will just use the veggies that are in my fridge but I have to admit I bought the green cabbage for this video!!! Frozen udon noodles seem to be the most popular by chefs, however, for us we can only buy the shelf stable udon noodles in our small town store that tend to fall apart if you aren't careful cooking them. When I am in our local city, Calgary, I always pick up a package or two of dried noodles to have on hand. The dried noodles are a little flat in shape but that is okay with me. If you only have spaghetti or fettuccini noodles give those a try for this. I am sure they will be delicious. Here is the sauce I made today: 2.5 T dark soya sauce 2 T oyster sauce 1 T mirin 2 tsp brown sugar 1/2 tsp rice wine vinegar An alternate sauce idea: 2 T soya sauce 1 T maple syrup 1 T Worcestershire sauce 1/4 tsp black pepper Our son moved to Japan in November of 2021 and this was one of the first dishes I made to celebrate him heading to his new job as an ALT for the JET programme of Canada. He is an English language teacher and loves it!! He still lives there as of May 2024 and I have had the immense pleasure of visiting in 2023. I loved Japan!!
