Using the Instant Pot to make mashed potatoes has never been easier!  

RECIPE:
3 lbs yukon gold potatoes
8 cups water
1 tablespoon salt
1 cube butter
1 rosemary sprig
1 thyme sprig
3 sage leaves
2-3 garlic cloves, crushed
4 oz. cream cheese
1/2 cup sour cream
1/4 - 1/2 cup milk
1/4 cup parmesan cheese (optional)
Salt and pepper to taste

1. Wash, peel and quarter the potatoes.  Place potatoes in Instant Pot.
2. Add water and salt to pot.  Place lid, turn to sealing, press "steam" for 12 minutes.
3. In a saucepan, add butter, herbs and garlic. Melt the butter and then turn off heat and allow to infuse for 15 minutes.  Remove the herbs and garlic.
4. When the timer goes off, turn handle to "vent" for a quick release.
5. Remove lid and drain the water.  Leave potatoes in the pot and mash.
6.  Pour in the infused butter and mix well into potatoes.  Add in the cream cheese, sour cream and mix until all incorporated.  Add enough milk to desired texture.  If you want, add in the cheese and salt and pepper to taste.
