Chewy delicate stir fried wok charred wide rice noodles with chicken. Check out this easy recipe!

INGREDIENTS:
1 Ib (450 g) fresh wide rice noodles (ho fun noodles)
1 Ib boneless chicken thighs thinly sliced
1 tbsp oyster sauce
1 tbsp Thai Soy sauce
1.5 tsp Thai Fish sauce
1.5 tbsp Golden mountain sauce
1 tsp Thai black soy sauce
5 cloves garlic
2 large eggs
2-3 stalks (75g) Chinese broccoli/gai lan
1 tbsp granulated sugar
Salt and pepper to taste
2-3 Thai chilis (optional)
1 tbsp olive oi
2-3 eggs

TIPS
1. Try to choose Thai based soy sauces and fish sauces.
   1. Megachef, three crabs, red boat are decent picks.
   2. Try to get golden mountain sauce if you can (basically Thai soy sauce with more umami)
2. For oyster sauce, would recommend the lee yum see, panda, or megachef brands.
3. Recommend cooking the meat separately first.
4. Recommend fresh wide rice noodles. You can find these at many Asian groceries in the refrigerated sections
5. If you use dried noodles soak the noodles in hot boiling water 10 minutes, drain and rinse under cold water. Don’t over soak or it will be too delicate when stir frying!
6. When frying, try not to touch the noodles so much after mixing in all the ingredients. You want to leave some time to develop a nice char to the noodles.
7. Recommend cooking in smaller batches to maintain the right amount of heat to char noodles since many home stoves don’t get as hot as commercial burners.
